I love this recipe. It is a very easy to make, tasty bread. Goes well with your Corned Beef and Cabbage recipes. It tastes best when made the day before or several hours before serving. Here it is:
Ingredients:
3 cups all-purpose flour
1 tablespoon baking powder
1/3 cup white sugar
1 teaspoon salt
1 teaspoon baking soda
1 egg, lightly beaten
2 cups buttermilk (don't have buttermilk? see substitute below*)
1/4 cup butter, melted
Directions:
Preheat oven to 325 degrees. Grease a 9x5 inch loaf pan.
Combine dry ingredients. Blend egg and buttermilk together and add to the flour mixture. Mix just until moistened. Stir in butter and pour into pan.
Bake for 65-70 minutes, or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Wrap in foil for several hours or overnight for best flavor.
*Buttermilk substitute: Place 2 Tablespoons of white vinegar or lemon juice in a liquid measuring cup, then add enough milk to bring the liquid up to the two-cup line. Let stand for 5 minutes, then add to recipe.
